Super yummy! Japanese Okonomiyaki.

Do you know okonomiyaki? It is made of flour dissolved in water as a batter, egg, vegetables, meat, seafood, noodles, and other ingredients of your choice, grilled on a griddle, and eaten with sauce, mayonnaise, aonori (green laver), and other seasonings. The style of cooking and ingredients vary by region, and there are various styles and ingredients of okonomiyaki, such as “cabbage yaki,” “Kansai-style okonomiyaki,” “Hiroshima-style okonomiyaki,” “betayaki,” “enshu-yaki,” “kakioko,” “negiyaki,” “kashiminyaki,” “choboyaki,” and so on.

The okonomiyaki in the video is from a famous okonomiyaki restaurant called Hassho, and it is freaking delicious! Hassho has its main branch in Hiroshima. Hiroshima Prefecture is famous for okonomiyaki, so if you visit Hiroshima as a tourist, please try their okonomiyaki!

Hassho’s okonomiyaki is called Hiroshima-yaki, and unlike Kansai okonomiyaki where the ingredients and dough are mixed together before cooking, Hachimasa’s okonomiyaki is characterized by “layered cooking,” meaning that the thin crepe-like dough is first cooked, then the ingredients are added on top to create layers. In other words, the crust is thin and the cabbage and other vegetables are plentiful.
